My wife went on a meat kick this week. Brisket on Sunday, steaks on Monday, leftover brisket for lunch yesterday, chili for dinner last night . I’m ready for some pasta or maybe breakfast for dinner...

This was store-bought brisket (Rudy’s here in Austin), I don’t have my own smoker. I have a neighbor who does, and is very good at it. H e calls me up whenever he cranks it up so I can bring some meat down to him which he smokes for me.

Breakfast for dinner is always a winner. This was Rudy’s brisket (actually rare for there to be leftovers) , which we like very much. It made a fantastic omelet.

Mostly pork loins. You can get pretty big pieces of pork for relatively low prices, at least compared to beef.

Rudy’s is always a good option. We have crappy BBQ options over here, so we usually have to make it ourselves.

I thought the loins get dried out in the smoker because they’re not fatty enough? That was my experience, anyway. A pork butt is my go-to when I finally figure out what I’m doing.
